Buckwheat production volume Japan 2012-2021
In 2021, the production volume of buckwheat, also known as soba, amounted to around 41 thousand metric tons. The figure decreased compared to around 45 thousand metric tons in the previous year, when the figure was the highest in the last decade. Buckwheat production had previously fallen as low as less than 29 thousand tons in 2016.
Buckwheat in Japan is commonly used to make soba noodles. The thin soba noodles are either served hot in a broth or chilled with a dipping sauce.
