French cheese: the Camembert
Camembert is a soft cow’s milk cheese originally from the Normandy region in France. The variety “Camembert de Normandie” is a protected designation of origin (PDO), while the production of “Camembert” is not subjected to specific requirements. The Camembert de Normandie must be made from unpasteurized milk and contain at least 70 percent milk from Normandy. However, a modification of this regulation should come into effect in 2021, allowing the production of that specific cheese using pasteurized milk.
Cheese consumption in France
In France, the yearly per capita consumption of cheese amounted to about 26.5 kilograms in 2018. French bought in average 30 percent of pressed cooked cheese among their cheese purchases. Aside from soft cheese, this type of production was one of the most common type of cheese among PDO cheese marketed in France in 2019.
