Cassava, also known as yuca or Brazilian arrowroot, is a starchy root vegetable native to South America. Though cassava is toxic when consumed in its raw, unprocessed form, it is a food staple in many developing countries. In the Asia Pacific region, Thailand and Indonesia were the two leading countries in terms of cassava production in 2017. In that year, Thailand’s cassava production volume reached 30.97 million tons.
