Ratios can vary significantly depending on the size of the point of sale and their specialization. Note that the share of turnover realized by the resale of drinks (hot and cold) can reach 10% of the total turnover, and that the share realized by the bread can be reduced to 20% of the turnover in some cases. The annual turnover of the bakeries remains very variable: the amplitude can range from 200 000 to 1 million euros, the tendency being to reinforce the activity of the store rather than to increase their number."
