Note that the share of turnover realized by the resale of drinks (hot and cold) can reach 10% of the total turnover, and that the share realized by the bread can be reduced to 20% of the turnover in some cases. The annual turnover of the bakeries remains very variable: the amplitude can range from 200 000 to 1 million euros, the tendency being to reinforce the activity of the store rather than to increase their number."
