In the brewery year 2022, the largest share of special-designated sake produced in Japan was graded junmai-shu, with almost 57 thousand kiloliters. Special-designated sake refers to premium sake which is graded according to the ingredients and the polishing rate of rice in the manufacturing process. For junmai-shu, up to 70 percent of a rice grain is used in the fermenting process. Other ingredients include distilled alcohol and rice treated with koji mold.
