In 2021, around 184 thousand tons of rice were used in sake brewing in Japan, representing a increase from 180 thousand tons consumed in the previous year. Apart from sake rice used in the manufacturing of mainly premium liquor, a variety of general rice used in food processing were considered suitable for sake brewing as well.
