In 2021, the shipment volume of wheat proteins in Japan amounted to around 19.5 thousand tons. Wheat gluten processed in Japan include mainly granular, powdered, and paste-like products. They can be used in the production of mock meat but are most commonly found as steamed or baked dough blocks in Japanese cuisine.
